Kali's Carmel Recipe



Today Kali wanted to make carmel, so I helped her a little, but she made it mostly by herself. I just poured the hot carmel into the pan. It is real easy to make...and yummy!


Here is the recipe-


Microwave Caramels


1/2 cup white butter

1/2 cup white corn syrup

1/2 cup white sugar

1/2 cup brown sugar

1/2 cup sweetened condensed milk

1/2 cup pecans, chopped. (optional)


1. Using microwave-safe dish or large measuring cup, melt butter

2. Add syrup, sugars and milk. Stir well and microwave for 6-8 minutes. If you want soft caramels microwave 6-7 minutes and if you want harder caramels microwave for 8 minutes.

3. Pour into sprayed 8" X 8" dish and refrigerate for 30 minutes.

4. Cut into pieces. If you find it too firm to cut, warm in the microwave oven 30 seconds at a time until you reach desired consistency.

5. Caramels can be dipped into melted chocolate or individually wrapped in wax paper ( twist the ends)

Fall Sports Classic 2008


This is our whole Special Olympics team we took to fall games.


Justin went with us and played bocce on a unified team. That means that there were four on his team, there were two special olympics athletes and two regular athletes. They took second in their divsion, and so the got a silver medal. Way to Go!!




Kevin and Derek wanted their picture taken with Miss Utah, but they were too chicken to ask her. So I asked her and she was more than willing. So here is Miss Utah with the swim team. She was so nice to come and spend the day at Special Olympics.



This is the swim team with their medals. Kevin and Christy were in the same heat in the 25 meter freestyle. Kevin got first and Christy got second. It is the first time that Kevin has beaten Christy either in practice or competition. We got these new suits for them just before the competition and they really seemed to make their times faster. Good Job!!

Happy Birthday Kevin



On August 28th, Kevin had his 29th birthday, although he tells people that he is 3o. He wanted a Denver Bronco cake, and I had to go to three places before I found someone that would make it. But Kevin really liked it, so it was worth it. Happy Birthday Kevin.

Saydee Reese Davies


Saydee Reese Davies was born this afternoon, August 25, 2008 at 3:11 p.m. Her weight was 7 pounds and her length was 21 inches. We are so grateful to have here here and both Saydee and Lori are doing great.

Pioneer Day---more water fun



We played in the water at Ashley Creek. They would walk up the creek a little ways and then float down. The water was waist deep in the middle, and the current was a little fast, but it was lots of fun. This is a picture of Kali's rock collection, she said she wanted rocks that looked like potatoes. After we got home she painted the rocks.

July 24--Pioneer Day...traditions

On July 24, we started out the day by going to the Scout Breakfast. Then we went to the parade. Kali was in the parade, but I didn't get a picture, she was on the other side of the float. Then we went to "Remember The Maine Park" and had lunch, and then played in Ashley Creek. We all had a good time and lots of laughs. This is the third year in a row that we have done, this, so now it is tradition, and something we have to do.



4-H Fun


On July 22, Ashley, Amanda and Kali attended a 4-H fun day. They made tie-dyed t-shirts, made candles and rockets. Then later in the day they went swimming at the Rec cemter. Here they are modeling their t-shirts.

Fun at the beach



We went to the beach. It was really fun. The water was warm, and the tide was coming in. The wind was blowing some. The sand there is reall white...almost like snow. We walked along the beach and picked up shells.

These pictures were taken at Charleston Bay. One is of a war ship that is in the bay. They had beautiful fountains along the bay, and there was lots of kids paying in them. The other picture is of some kids who were catching crabs. They said they had caught 11 crabs that day. They asked if I wanted to take their picture, they said everyone else had.

These houses were along the bay in Charleston. They are on the historical register, and so they aren't allowed to change the color or anything about the outside of the building. They were sure beautiful.


Family Reunion


On July 10, Mom, Dad, Vicki, Karen and I left on an adventure. We drove to Albuquerque and caught the plane to Atlanta and were suppose to go on to Knoxville, Tennessee, and then to Rogersville to the family reunion. There was a bad storm in Atlanta, and it moved on to Knoxville, canceling our flight to Knoxville. So we spent the night in Atlanta, and the next morning we drove on to Knoxville and picked up out luggage, and drove on to Rogersville. (Our luggage made it to Knoxville, but we would have had to wait two days for the next available flight) The family reunion was really fun, and we met lots of really nice people. Thanks Mom and Dad for taking me, I had lots of fun, and will never forget it. The family joke is if you travel with Karen and I plan on an adventure, and once again we lived up to that.
After we left Rogersville we headed to the Beach house, in Walterboro, South Carolina. We spent a few days with Jim, Lisa, Zak and Brett. Vicki stayed with them, ( I think she had enough adventure for one trip...just kidding) Vicki stayed to help Lisa with the kids while Lisa is taking some college classes. After we left the Beach house we headed for Charleston.

I decided to do this because our family is growing and spreading out, and this is a way for is us to let you know what we are doing, and a way to share life with us.

Don't expect to solve the world problems, this is just something fun. You know me I don't take life too serious.
